This Chocolate Brownie Pie recipe is one you’ll come back to again and again. Crisp chocolate pie crust with a fudgy brownie centre. Try it still warm with a scoop of ice cream.

You may or may not know of my love for brownies but when an idea of Chocolate Brownie Pie pops into my brain, I follow that lead.

WHAT IS CHOCOLATE BROWNIE PIE

This indulgent pie is a simple chocolate brownie pie crust shell – using the pie crust from these Mini Chocolate Tarts – and a rich, fudgy brownie centre. I just love how the top goes all crisp and crackly.

Decadent, super chocolatey and ridiculously easy to make from scratch, you need to bolt to your kitchen right now and make this brownie pie recipe. You’ll never need another one.

And whilst rich, it’s not as tall as a slice of cake so you will easily finish off a slice and likely want another one.

HOW TO MAKE CHOCOLATE BROWNIE PIE

I love a simple recipe as much as the next person. This pie is made in two steps – the brownie pie crust and then the brownie filling itself. Both steps are simple and you can say you made it all from scratch.

For the brownie pie crust, start by placing your dry ingredients and butter in a food processor (photo 1) and process on low for around 20-30 seconds until the smallest piece of butter is about the size of half a pea.

When making pastry, make sure your ingredients are cold (ie butter and water) as this will give you the crispest and flakiest result. I will often put everything, including the flour in the freezer 15 minutes before I start so I know it’s all super cold.



SERVING SUGGESTION AND MAKING BROWNIE PIE AHEAD

This fudgy chocolate pie will be hard to resist once you take it out of the oven but do wait for it to cool a little so that you can slice through and cut clean slices. I love mine still just warm with a scoop of vanilla ice cream on top. So, so good.

It reheats like a dream so you can make it a day or two before, then reheat slices in the microwave or the whole thing in the oven for just a short time then serve.



CAN BROWNIE PIE BE FROZEN?

Yes, you can freeze it whole or sliced. Once cold, wrap it well in plastic wrap and then place in an airtight container if you have one the right size and freeze for up to 3 months.

Let it thaw at room temperature (3-4 hours if it’s a whole pie) then reheat as required. Or you can eat it cold too.

Ingredients

FOR THE CHOCOLATE BROWNIE PIE CRUST
165  g  (1 1/4 cups / 2.3oz ) plain (all-purp) flour
1/4  cup  (25g / 1oz) unsweetened cocoa
2  tablespoons  icing (powdered / confectioners) sugar (notes)
115  g  (1/2 cup / 1 stick) unsalted butter, cubed and chilled
2 tablespoones ice cold water (notes)

FOR THE BROWNIE FILLING
85  g  (3/4 stick / 3oz) unsalted butter
50  g  (1/4 cup / 1.8oz) dark (70% cocoa) chocolate
3  large eggs
150  g  (3/4 cup / 5.3oz) packed dark muscovado sugar (notes)
150  g  (3/4 cup / 5.3oz) granulated white sugar
1 teaspoon vanilla
65  g  (1/2 cup / 2.3oz) plain (all-purp) flour
50  g  (1/2 cup / 1.8oz) dutch processed cocoa
1/2  teaspoon  salt

Instructions
FOR THE CHOCOLATE BROWNIE PIE CRUST
Place the flour, cocoa and sugar in a food processor and pulse 2 times to combine
Add the chilled butter and blitz for about 20 seconds until the lumps are quite small (1-2mm). With the processor on low, drizzle cold water, just until it begins to clump.
Pull the dough together with your hands and shape it into a disk. Wrap in plastic wrap and chill for 15 minutes.
Preheat the oven to 180C / 350F / 160C fan forced. Line the base of a 8 inch round, deep pie dish with baking paper.
Dust a clean worktop with a little cocoa. Roll the dough out to about 3mm thickness. Place one side over your forearm and lift the other side with your free hand and lay the dough into the tart tin. Poke holes all over the base with a fork, then chill for 15 minutes in the freezer or fridge for 30 minutes.
Lay a sheet of baking paper into the tart shell and fill with rice or baking weights. Bake for 15 minutes. Remove the weights and paper and bake a further 10 minutes.

FOR THE BROWNIE

On the VERY LOWEST heat, melt the butter and chocolate together in a saucepan, stirring regularly. Remove from heat.
Use a handheld beater to beat together the eggs and both sugars until fluffy. Add the melted chocolate mixture and vanilla and mix through.
Sift over the flour, cocoa and salt and use a spatula to mix through until just combined.
Pour into your pie crust and bake for 35-40 minutes turning the tray halfway through. It’s cooked when the top is dry but it feels firm when you press down gently. A toothpick inserted will come out with some thick sticky crumbs on it.
Let it cool until just warm before, slicing, topping with ice cream and serving.

The past couple of weeks have been crazy around here. I can’t even believe that school has started back. As a homeschool mom, I hate to see our laid-back summer coming to an end. One thing is for sure; dinner has to be simple now. Otherwise, I am tempted to order in, which isn’t always good when you are determined to stick to a keto/low carb way of eating.
Does It Taste Like Cauliflower?
Gosh, I hope not as I don’t enjoy cauliflower. Thankfully, all the spices in this recipe completely tone it down, and I don’t taste cauliflower at all. My son, who hates cauliflower and is always suspect of hidden veggies in new recipes thought that the cauliflower was corn. I’m not sure why perhaps he was just confused since I am known to sneak veggies in his foods. 
When you saute the onion, green bell pepper, and garlic in butter, it helps release the flavors. Although I love my cast iron skillet, you could use any other kind of skillet. Cast Iron is very affordable and last forever, unlike the other skillets that I replace once a year. This Lodge Cast iron Skillet on Amazon is a great price.

I use a steam bag of riced cauliflower as it is easier than using fresh. In this season of my life, I don’t have time to wash the cauliflower, cut it, grate it, and steam it. Perhaps one day when I’m not chasing toddlers, but even then that steam bag is so convenient I may stick with it forever. I love how the taco seasoning, diced tomatoes, and veggies help the cauliflower to blend in with the rest of this dish. It takes on the flavor of the taco seasoning, which means it doesn’t taste or smell like cauliflower. Yes, that makes me happy.


By the time you add the chicken and cheese to this Cheesy Mexican Skillet, you won’t even remember the riced cauliflower. I prefer to use cheddar and Monterey Jack cheese but feel free to switch it up. I also grate my own cheese to avoid the fillers added to pre shredded.

Tips for Making Keto Cheesy Mexican Skillet Chicken
I have found that one skillet or casserole type meals are quick and easy especially when both of my big kids are playing sports. By cooking the chicken in my slow cooker first, it cuts back on cooking time so that I can have dinner on the table in a snap. I simply place the boneless skinless chicken breasts in a slow cooker and cover with chicken broth and salt/pepper. Then, I slow cook on low for 6 hours or high for 3 hours. You can easily use your Instant Pot for the chicken, or even use a rotisserie chicken if you prefer. Another option is to sub ground beef for the chicken and beef broth for the chicken broth for a nice variation.
How I Store Keto Cheesy Mexican Skillet Chicken
You can store this Low Carb Mexican in the fridge for 3-4 days or in the freezer in an airtight container for up to 6 months.

Cheesy Mexican Chicken Skillet

This Keto Cheesy Mexican Skillet Chicken is going to become one of your all-time favorites! It is so delicious, full of flavor, and a great casserole style meal that everyone in your family will enjoy. Top with your favorite cheeses and enjoy the ooey gooey meal!

Ingredients
  • 1 tablespoon butter
  • 1/3 cup diced onion
  • 1/3 cup diced green pepper
  • 3 garlic cloves minced
  • 2 cups cooked chicken shredded (I prepared mine in the slow cooker)
  • 1 can Rotel tomatoes
  • 1 12 oz bag steamed riced cauliflower
  • 2 tablespoons homemade taco seasoning or taco seasoning packet
  • 3/4 cup chicken broth
  • 1 1/2 cups cheddar cheese
  • 1/2 cup Monterrey jack cheese
Instructions

In a cast iron skillet, melt butter then saute onion, pepper, and garlic  until softened.
1.   Steam riced cauliflower in microwave according to package directions.
2.   Add homemade taco seasoning, Rotel, chicken broth, and cauliflower to skillet.
3.   Stir to combine then cook on medium/low approx 10 minutes until extra liquid is absorbed.
4.   Add cooked chicken and stir well. If mixture gets too thick, add a little more chicken broth.
5.   Simmer on low covered for 5 minutes.
                    Sprinkle cheese on top, cover and simmer until cheese is melted.
                    Optional: Serve with sour cream, cilantro, jalapenos, etc.





Notes:
You can also make this recipe with ground beef and beef broth for a fun variation.

Amazing Chocolate Cake !

You won’t find a better chocolate cake recipe than this one. You will be amazed at how good it is, and you will amaze those that you make if for.
I have been searching for a great chocolate cake recipe for years. I have found it. My search has ended. I now have THE recipe. If you have ever seen the movie Matilda you will surely remember the scene where the boy is forced to eat the most delicious looking chocolate cake ever. I feel just like that boy when I eat this cake. It is my Matilda chocolate cake for sure.

RICH CHOCOLATE CAKE RECIPE



This cake is dark, moist, rich and incredibly decadent. Seriously, it’s the best chocolate cake I’ve ever tasted.

Green Mountain Coffee’s Vermont Country Blend blended amazingly well with the cocoa to create the most intense and delicious chocolate cake that I have ever tasted.

You can also use espresso powder, or just water, if coffee isn’t your thing. (I know there are a few of you out there!)

Just to cover that aspect, you cannot taste coffee in this cake. It simply enhances the chocolate flavor, deepening it.


ÍngredÍents :

The Most AmazÍng Chocolate Cake
butter and flour for coatÍng and dustÍng the cake pan

3 cups all-purpose flour

3 cups granulated sugar

1 1/2 cups unsweetened cocoa powder

1 tablespoon bakÍng soda

1 1/2 teaspoons bakÍng powder

1 1/2 teaspoons salt

4 large eggs

1 1/2 cups buttermÍlk

1 1/2 cups warm water

1/2 cup vegetable oÍl

2 teaspoons vanÍlla extract

Chocolate Cream Cheese Buttercream FrostÍng :

1 1/2 cups butter softened

8 oz cream cheese softened

1 1/2 cups unsweetened cocoa powder

3 teaspoons vanÍlla extract

7-8 cups powdered sugar

about 1/4 cup mÍlk as needed
US Customary - MetrÍc


INSTRUCTIONS :

Heat oven to 350°F. Grease and flour two 9-inch round baking pans or one 13x9x2-inch baking pan. Set aside. In the bowl of a stand mixer fitted with the whisk attachment or in a large bowl with an electric mixer, combine the sugar, flour, cocoa(s), baking soda, baking powder and salt. Mix on low until dry ingredients are thoroughly combined.

Add eggs, buttermilk, coffee, oil and vanilla. Beat on medium speed for about two minutes; the batter will be thin.

Pour batter evenly into prepared pans.

Bake in preheated oven for 30 to 35 minutes for round pans, 35 to 40 minutes for rectangular pan or until wooden toothpick inserted in center comes out clean.

Cool 10 minutes; remove from pans to wire racks. Cool completely.

Frost as desired. I used a simple and delicious Chocolate Buttercream Frosting from Savory Sweet Life. One batch was perfect for this chocolate layer cake.

NOTES :

The Black Cocoa from King Arthur Flour is optional - it simply provides a great depth of flavor and color to the chocolate cake.

This cake also pairs beautifully with a simple chocolate ganache.

The coffee really brings out the depth of the chocolate (you won't even taste the coffee at all!), but if you really don't want to use it, feel free to substitute water.

For an egg substitute, simply add one mashed banana or 1/4 cup unsweetened applesauce for each egg.

This recipe will make about 24 to 36 cupcakes. Bake at 350 degrees between 20 and 30 minutes.

You can also make a bundt cake with this recipe. The cake should bake for about 35 to 40 minutes at 350 degrees.

Princess Charlotte's "Very Excited" For First Day Of School

Princess Charlotte marked a significant milestone this morning as she arrived with William, Kate and big brother George for her first day of Reception at Thomas's Battersea.


For all parents, preparing your little one for their first day of school is a very special time; from taking snaps for the family album to assuring them they are going to be absolutely fine and have a brilliant day. I imagine seeing them in their uniforms and realising he or she is growing up is a bittersweet part of the day. I'm sure many of you can relate to those feelings as school term commences.


This morning will have been particularly important to Kate. Two years ago, when George attended his first day of school, the Duchess was unable to take him as she expecting Louis and suffering from Hyperemesis gravidarum.

During the summer, the Cambridges enjoyed a two-week break to Mustique where they celebrated Prince George's birthday, and divided the remainder of their time between their Norfolk home Anmer Hall and Kensington Palace, before travelling to Balmoral to visit Her Majesty and Prince Philip.


The family were greeted by Helen Haslem, head of Thomas' lower school, William told her Charlotte's "very excited" about school.

'The Duchess said "Good morning! How are you? Did you have a nice summer?" before encouraging Charlotte to shake hands. The Duke added: "First day! She's very excited." While George chatted happily, Princess Charlotte walked slightly behind her mother and tugged on her hand in a shy contrast to her usual confident appearances. 
Princess Charlotte has become known for her spirited appearances in front of the cameras, usually seeming calm and confident in her rare moments in the spotlight. As she visited her brother Prince Louis at the Lindo Wing following his birth, she charmed onlookers with an impromptu look and wave behind her as she climbed the steps.
During his christening, she was caught on camera cheerfully telling photographers "you're not coming" as she walked to a tea party with her family. In a recent trip to a charity sailing regatta on the Isle of Wight, she left the Duchess laughing after she poked her tongue out at a waiting crowd.'

The Princess will be known as Charlotte Cambridge at school. People recently reported the four-year-old "can't wait to be at big school with George. She's so excited about it all". We know she's very outgoing, characterful and has a playful personality, undoubtedly she's eager to dig into a new adventure.


I remember George arriving with William, full of apprehension and those first day nerves. According to various reports since, he's settled in brilliantly and is very much enjoying school life. He's beginning Year 2 today.

Making their way inside where George will be reunited with old friends and Charlotte will be introduced to new ones. Kate said "George will help lead the way".

Thomas’s Battersea is a busy, thriving, purposeful school, educating 560 boys and girls between the ages of 4 and 13. The most important school rule is 'Be Kind'. Core values include courtesy, honesty, respect, leadership and independence. The school, has been described by the Good Schools Guide as: "A big, busy, slightly chaotic school for cosmopolitan parents who want their children to have the best English education money can buy. That is what they want and, to a large degree, that is what they get." The school has a big focus on celebrating a range of different cultures within its walls, with 19 languages spoken in the homes of its pupils. The fee-paying school charges in the region of £17k per year.

The multicoloured summery dress is described as "a colorful carnation print in shades of red, pink, navy and white. Made from lightweight crepe, it's buttoned through the front so you can customize the neckline, and has softly gathered sleeves. Knot the coordinating leather belt to define your frame." Kate first wore it for Harry and Meghan's wedding rehearsal last year.

Kate's lighter locks received much commentary on social media this morning. The cut actually reminds me of her hairstyle around the time of the engagement in 2010. It's very fresh and summery.

The Cambridges Join The Queen For Sunday Service at Crathie Kirk

The Duke and Duchess of Cambridge, styled as the Earl and Countess of Strathearn in Scotland, joined Her Majesty today for Sunday service at Crathie Kirk.

Samantha suggests the Duchess wore the Navy Herringbone trench coat by Guinea London. The £525 piece is described as: "The Trench is an amazing and dramatic coat, which takes its inspiration from the long straight line of a military greatcoat but with the sassy flowing shape of the '60s maxi coat.  Available in sizes 6 to 20, it is very flattering and easy to wear. Crathie Kirk is a small Church of Scotland parish church in the village of Crathie. It is known as a regular place of worship for the British Royal family when they are staying in nearby Balmoral.


Queen Victoria worshipped there from 1848, and every British monarch since has attended services at Crathie Kirk. Initially, Victoria's decision to worship at Crathie Kirk caused a scandal, particularly when it was discovered that she had received communion there. As Supreme Governor of the Anglican Church of England, it was expected that she would visit the Scottish Episcopal Church, which recognised the authority of the Archbishop of Canterbury. Undeterred by criticism, she laid the foundation stone for a new, much larger, church in 1893. Below, the Kirk in 1895.


The Royal family first became interested in Balmoral in 1847 when Queen Victoria and Prince Albert visited Ardverikie on the edge of Loch Laggan which is in the west Highlands of Scotland. Their time there was marred by terrible weather - Queen Victoria mentions the 'pouring rain'​ many times in her diary. While at Ardverikie the son of the Queen's physician, Sir James Clark, wrote a number of letters to his father who was convalescing at Balmoral. The letters from Balmoral described blue skies and fine weather - the news of dry weather interested Prince Albert. In 1848 it was therefore suggested that the Balmoral climate would make a more suitable Scottish residence for the Queen, with the artist James Giles commissioned to make watercolours of a plan of the house. The decision was soon made to acquire the remaining 27-year lease for Prince Albert, and in 1852 Queen Victoria and Prince Albert bought the castle outright.


Victoria would later described Balmoral as "a paradise in the Highlands. All seemed to breathe freedom and peace, and to make one forget the world and its sad turmoils".


The Queen and Prince Philip have spent two months every summer at the retreat, and have a lifetime of family memories there. It is said Her Majesty is happiest there. William and Kate's own tradition of visiting the highlands began in the early years of their relationship and now continues with George, Charlotte and Louis.


The royals enjoy going for long walks, exploring all the natural beauty the estate has to offer, along with family picnics and plenty of fun and games for the children.


As we approach the end of August, members of the family will return to London ahead of their autumn schedules commencing. I think it likely we'll begin to hear engagement announcements for early September next week. Following the 'Back to Nature' installation at RHS Chelsea and Hampton Court, it will move to its final destination - to form part of a new children's garden at RHS Garden Wisley in Surrey on 3 September. I expect we'll see Kate there for the preview day. On Thursday, 5 September Charlotte will attend her first day at Thomas's Battersea where she'll join big brother George.

The Cambridges Make Annual Sojourn to the Highlands!

The Cambridges are enjoying their annual summer sojourn to Balmoral to spend time with the Queen, Prince Philip and other members of the family before they all return to England from summer break to commence their autumn schedules. William, Kate, the children and Nanny Maria Teresa were filmed travelling early yesterday morning (the brief video can be viewed on the Mail Online). Today, William and Kate were photographed arriving for lunch with HM, Philip, Princess Anne and her husband Tim Laurence, and Peter Phillips and his family. It's possible Carole and Michael Middleton are staying with the family too; a fellow traveller reportedly spotted Mrs Middleton on the flight.


With a full turnout at the 'Big House' every summer, the Cambridges have stayed at Charles' private residence Birkhall and a three-bedroom cottage on the estate, Tam-Na-Ghar, which holds very fond memories for the couple. People reports: 

'William and Kate have spent some of their most romantic times at the residence, staying at a cottage called Tam-na-Ghar during their breaks from St Andrews University. The Prince also surprised his then-girlfriend in 2009, arranging a candle-lit dinner in a remote log cabin on the banks of the River Dee. A year later, Kate's parents Carole and Michael Middleton were guests of Prince Charles at his mansion on the estate, Birkhall. It was a sign that William and Kate's relationship was becoming even more serious – days later their engagement was announced.'

Visits to the highlands include plenty of fresh air, long walks, hearty meals and plenty of fun and games for the children. It's a great opportunity for the family to spend quality time together at the Queen and Prince Philip's beloved retreat. Previous visits have included picnics in the hills above Loch Muich.


In previous years, we've seen the Queen driving Kate and Carole Middleton around the estate.
